Tatenokawa Kyokugen Junmai Daiginjo is a flagship expression first introduced in 2013, representing Tatenokawa’s dedication to precision and craftsmanship. The renewed version is made at Tatenokawa’s new facility, completed in 2021, using 100% Yamada Nishiki polished over approximately 40 days until only 8% of the grain remains. Produced in small batches with Moromi temperature controlled to increments of 0.1°C, the careful process creates a more aromatic, fresh, and clearly defined character. Its presentation is equally distinctive, featuring a label made from traditional Miyama Washi from Yamagata Prefecture and an elegant white carton.
