Hakushika Hana-kohaku Cherry Junmai Daiginjo combines a rich, flavorful, and transparent Junmai Daiginjo base with carefully balanced juice from fresh Satonishiki and sour cherries. The cherry juice is pressed and frozen soon after harvest to help preserve its fresh character before being blended into the finished expression. Hakushika brings its longstanding Japanese heritage to this distinctive creation, which stands apart through the contrast between the concentrated, mellow sweetness of Satonishiki cherries and the bright acidity and gentle tartness of sour cherries.
