Tatenokawa Stream Red Junmai Daiginjo, known as “Kyuryu” or “Stream,” is the entry expression in Tatenokawa’s Extreme Series, created to introduce the world of ultra-high rice polishing in an approachable way. While many Junmai Daiginjo expressions are commonly made with rice polished to around 35–40%, Kyuryu uses Yamagata-grown Dewasansan polished to 33%, highlighting Tatenokawa’s focus on highly polished rice and refined craftsmanship.
