Juyondai Shichitare Nijikkan Junmai Daiginjo is one of Takagi Shuzo's most exclusive expressions, distinguished by its exceptionally limited yield and traditional gravity-drip collection process. The name "Shichitare Nijikkan" originates from the historical Japanese Shakkan system of measurement, where “Shichitare” refers to the concept of naturally dripping liquid drop by drop, and “Nijikkan” refers to approximately 20 kan of rice—about 75 kilograms—symbolizing the extremely limited amount of material used in traditional production standards passed down through generations. This meticulous process, which involves placing the fermented mash into cloth bags and allowing only the free-run liquid to drip naturally under its own weight, is exceptionally time-consuming and yields only a very small quantity. Crafted by the family-owned Takagi Shuzo in Yamagata Prefecture, this rare release showcases the producer's enduring commitment to precision, heritage, and uncompromising quality.
