Ozeki Rai Junmai represents an innovative expression from Ozeki, combining two traditional approaches, Sanki-Amazake-Moto and Kobo-Jikomi, through Ozeki’s “Mirai” concept. “Mirai,” meaning “future,” also connects to the name Rai (醴), a character that can be read as “Amazake,” reflecting the rich foundation that contributes to its pronounced umami character. This distinctive approach brings together the natural richness of rice with a clean, modern presentation and a dry finish.
