Ozeki Karatamba “Dry Wave” Honjozo reflects the heritage of the renowned Tamba Toji, one of Japan’s traditionally recognized producer guilds, rooted in the agricultural Tamba region of Japan. Ozeki carries forward the craftsmanship associated with this tradition, using Yamada Nishiki from Hyogo Prefecture as the koji rice. The result is a refined Honjozo style that balances savory umami with a crisp, clean character and a pronounced finish.
