Ozeki Jundan Jikomi Junmai Daiginjo is a distinctive premium expression from Ozeki, a long-established Japanese producer, inspired by the concentrated sweetness and layered character associated with late-harvest dessert wines. Made with 100% carefully selected Yamada Nishiki rice from Hyogo Prefecture and polished to 40%, it undergoes a distinctive ten-stage preparation in which steamed rice and rice koji are added in small portions under carefully controlled low temperatures. This extended process takes more than twice the time of Ozeki’s standard method, allowing the character of Yamada Nishiki to develop with greater depth and aromatic richness.
